You know spring is here when asparagus appears in the market. I eat it often—the season is just too short! Roasted Asparagus is my go-to recipe for this favorite vegetable, so good you can eat the spears like French fries!
1 bunch asparagus, washed and trimmed
Extra Virgin Olive Oil (Wild Groves Meyer Lemon or any of their Garlic Oils are all good)
Sea salt & freshly ground pepper to taste
Optional: your favorite herb blend, crushed garlic, parmesan, fresh lemon juice, balsamic (traditional or lemon)
Place your asparagus in a single layer on a baking sheet. Drizzle with olive oil and toss to coat. Sprinkle with salt and pepper to taste and herbs if using. Roast in a 400º oven for about 10 minutes or until done to your liking. Serve as is or sprinkle with Parmesan, and a splash of lemon juice or balsamic.
