Barbara’s Famous Sweet Potatoes

These become a must-have tradition whenever they are served. Bring copies of the recipe...everyone will want it!
CASSEROLE
- 3-4 large sweet potatoes, peeled,roasted, and mashed to make 3 cups
- 1/2 teaspoon salt
- 1/2 stick butter
- 1/2 cup milk
- 1 teaspoon vanilla
- 2 large eggs
TOPPING
- 1 cup brown sugar
- 1 cup chopped pecans
- 1/3 cup flour
- 1/2 stick butter
Instructions
- Preheat oven to 350 degrees. In a mixer, blend casserole ingredients until smooth. Pour into large, glass buttered baking dish. Combine topping ingredients and blend to pea-sized crumbles. Sprinkle over casserole. Bake for 35 minutes. Serves 6-8.
