Memorial Day is the unofficial start of the summer season, but, as soon as the thermometer hits 80 degrees, I’m ready to roll out the grill.
At NP we have lots of sauces and marinades to help add a little flair to your outdoor cooking. Robert Rothschild Farms, Stonewall Kitchens, and our own local favorite, Earth and Vine Provisions from Loomis, all have recipe collections on their websites to help inspire you to try something different for dinner.
One of my favorites is Pork & Zucchini Kabobs from Earth & Vine. This easy dish is both tasty and quick to prepare. Simply take 2 pounds of pork loin cut in one inch chunks, 12 mushrooms, 3 zucchini cut in chunks, and 2 yellow onions cut in chunks, and thread them onto skewers. Brush with olive oil and grill over a medium hot fire for about 5 minutes. Then combine one jar of Earth & Vine Peach Chipotle Jam mixed with the juice of a lime and 3 crushed cloves of garlic, and brush half of the glaze on the kabobs. Cook until done. Toss the rest of the glaze with 3 cups of cooked white rice, heat, top with kabobs and serve.
Round out your meal with a crisp, flavorful salad of tender organic greens from Hillview Farm in Auburn. The weather is perfect and Shannon and Michael are bringing us an amazing assortment of spring bounty from their farm.
