Easy Mandarin Pumpkin Cheesecake

- 8 oz Gina Marie cream cheese
- 6 oz mascarpone cheese
- 9 oz jar Earth & Vine Mandarin Pumpkin Marmalade
- One bag (8 oz) Beth’s Babies Ginger Snaps
- With a hand blender or stand mixer, blend cream cheese, Mascarpone cheese, and Mandarin Pumpkin Marmalade until fluffy. In a 9-inch pie dish, crush ginger snaps in the bottom, spread mixture over the top, and chill. Serve chilled.
