Gavin’s Salmon, Kale & Ricotta Salata Tostadas

The version of kale salad used here is also good made with baby spinach or romaine instead of kale.
Ingredients
- Crisped Corn Tortillas
- Kale Salad
- Refried Black Beans
- Grilled Salmon
Kale & Ricotta Salata Salad
- 1 bunch Tuscan or other kale
- 2 T finely chopped shallots
- 1 1/2 T lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 T olive oil
- 2 ounces (1 cup) coarsely grated ricotta salata
Instructions
- Trim stems off kale & discard. Slice kale into thin strips. Combine shallot, lemon juice, salt & pepper. Add oil in a small stream whisking until well combined. Toss kale and ricotta salata with enough dressing to coat well. Layer refried beans, kale & grilled salmon on crisped corn tortillas. Top with crumbled queso fresco.
