Why wait for the summer season’s fresh garlic crop to enjoy that satisfying garlic tang? Before the bulbs form, the tender, mild green shoots and leaves can be added like chives or green onions to salads and other dishes. Try this fresh green garlic pesto as a delicious topping for bread, pizza, pasta, baked potatoes, fish or chicken.
GREEN GARLIC PESTO
About 1 1/2 cups green garlic, white parts and tops
About 1/2 cup olive oil
Salt to taste
Puree all ingredients until smooth in a blender or food processor, adding enough olive oil to create a good spreading consistency.
OPTIONAL: Add a handful of pine nuts or other nuts, basil or other herbs, parmesan or other cheese, chilies, or whatever you like. Enjoy!
