Green Garlic Pesto
Why wait for the summer season's fresh garlic crop to enjoy that satisfying garlic tang? Try this fresh green garlic pesto as a delicious topping for bread, pizza, pasta, baked potatoes, fish, or chicken.

- About 1½ cups green garlic, white part and tops
- About ½ cup olive oil
- Salt to taste
- Purée all ingredients until smooth in a blender or food processor, adding enough olive oil to create a good spreading consistency.
