Make your winter salads sparkle with winter greens, mandarins, and dried cranberries.
Salad:
3 c baby spinach
3 c arugula
1 1/2 c mandarin segments
1 c toasted walnuts or pecans
3/4 c dried cranberries
1/2 c shaved Parmesan
Dressing:
2 T red wine vinegar
1 T mandarin juice
1 T honey
2 t poppy seeds
1 t Dijon mustard
1/4 c mandarin olive oil
Salt & pepper to taste
Toss spinach, arugula, mandarin segments, nuts, and cranberries together in a large salad bowl. Whisk together vinegar, juice, honey, poppy seeds, and mustard in a medium bowl. Slowly pour in the olive oil while whisking constantly. Season with salt and pepper. Pour dressing over salad and toss to combine. Top with Parmesan.
