- 2 lbs. Carrots
- ½ cup Newcastle Produce Mandarin Marmalade
- 2 Tbsp. Butter
- Peel and slice carrots at an angle ¼ inch thick. Add to skillet and barely cover with water. Bring to a boil and simmer, covered, for 8-12 minutes, or until done. Check half way through the cooking process (do not over cook).
- Drain when finished. Season with salt and pepper.
- Add butter and marmalade to pan until liquefied over medium heat. Add carrots back to pan and cook until well coated.
