  1. 2 lbs. Carrots
  2. ½ cup Newcastle Produce Mandarin Marmalade
  3. 2 Tbsp. Butter
  4. Salt/Pepper
  1. Peel and slice carrots at an angle ¼ inch thick. Add to skillet and barely cover with water. Bring to a boil and simmer, covered, for 8-12 minutes, or until done. Check half way through the cooking process (do not over cook).
  2. Drain when finished. Season with salt and pepper.
  3. Add butter and marmalade to pan until liquefied over medium heat. Add carrots back to pan and cook until well coated.
