  1. 1 1/2 lbs. carrots, peeled and cut into rounds
  2. 1 T butter
  3. 2 T Newcastle Produce Mandarin Marmalade
  4. 2 t Dijon mustard
  5. Salt & pepper to taste
  6. Fresh Italian parsley, chopped
  1. Steam carrots until tender. In a medium saucepan, melt the butter & marmalade. Stir in the mustard & carrots and season with salt & pepper. Cook over medium heat for a few minutes until the carrots are well coated and the sauce is bubbly. Toss with chopped fresh
