Marmalade Glazed Carrots

Ingredients
- 1 1/2 lbs. carrots, peeled and cut into rounds
- 1 T butter
- 2 T Newcastle Produce Mandarin Marmalade
- 2 t Dijon mustard
- Salt & pepper to taste
- Fresh Italian parsley, chopped
Instructions
- Steam carrots until tender. In a medium saucepan, melt the butter & marmalade. Stir in the mustard & carrots and season with salt & pepper. Cook over medium heat for a few minutes until the carrots are well coated and the sauce is bubbly. Toss with chopped fresh
