Melon Wrapped with Prosciutto
This simple, cold appetizer is a great way to start off a summer meal, and it makes a nice light lunch, too.

- 1 honeydew or cantaloupe, chilled, seeded, peeled, and cut into ½-thick slices
- 10-12 extra thin slices of prosciutto ham, cut into 1-inch strips
- Wrap one strip of prosciutto diagonally around each slice of melon. Arrange on a platter and serve. Options: Drizzle the plate with a simple dressing of balsamic vinegar, olive oil, and freshly ground black pepper. Or try serving the prosciutto-wrapped melon on a bed of fresh arugula tossed with your favorite vinaigrette.
- Serves 4 as a light meal or appetizer.
