Meyer Lemon Scalloped Potatoes

- 2 lbs. German Butterball, Yukon Gold or Yellow Finn Potatoes
- 1/2 cup Earth & Vine Provisions Meyer Lemon Rosemary Marinade & Dressing
- 2 garlic cloves, crushed
- 1/2 cup extra virgin olive oil
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon sea salt
- Preheat oven to 375˚. Cut potatoes into thin slices. A mandolin works best for even slices. Mix together marinade, garlic, oil, rosemary & salt. Toss potatoes in mixture and layer potatoes in a ceramic baking dish. Pour remaining marinade over potatoes. Cover potatoes with foil & bake for 30 minutes. Remove foil & continue baking for 30 to 40 minutes or until potatoes are tender.
