Perfect Peach Chutney
This delicious, no-cook chutney tastes great with grilled shrimp or chicken, lamb chops, or fish.

- 4 green onions, chopped
- 1/4 cup dried currants
- 1 tablespoon O Olive Oil Company’s Sherry Vinegar
- 2 teaspoons grated peeled fresh ginger
- 1-3/4 pounds locally grown ripe peaches (about 4 medium), peeled, halved, and pitted
- In a medium bowl, combine onions, currants, vinegar, and ginger. Cut peaches into small cubes, add to onion mixture, and toss to coat. Cover and chill at least 1 hour and up to 6 hours, tossing occasionally to meld the flavors. Makes about 4 cups.
