Persimmon Bread

Just wait until you smell this baking! It is delicious for breakfast or dessert.
Ingredients
- 2 eggs
- 3/4 cup sugar
- 1/2 cup oil
- 1 teaspoon baking soda
- 1 cup Hachiya persimmon pulp
- 1 1/2 cup sifted flour
- 1-2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- 1/2 cup raisins
Instructions
- Preheat oven to 325 degrees. In a large bowl, blend eggs, sugar, and oil. Mix soda into the persimmon pulp and then add it to the sugar mixture. In a small bowl, combine flour, cinnamon, and salt. Add walnuts and raisins to flour and salt, and then fold this dry mixture into the persimmon mixture. Pour into an oiled 3 x 4 x 9 inch loaf pan. Bake at 325 degrees for 1 hour and 15 minutes. Serve warm with ice cream, or spread with cream cheese or butter.
