Portuguese Kale Soup
Every Portuguese family has its own version of Caldo Verde, this great Iberian specialty. The key ingredients are kale, garlic, onions & potatoes. Try it with chorizo, a beef pot roast or vegetarian and make the recipe your own.

- 2 T olive oil
- 1 large yellow onion
- 1 lb. linguica sausage, chunked
- 4 cloves garlic, minced
- 6 cups chicken stock
- 4 large potatoes, peeled & diced
- 1 can Cannellini (white kidney beans)
- 1 bunch kale
- Salt & pepper to taste
- Heat the oil in a soup pot and sauté the onion, sausage and garlic until the onion is translucent. Add the stock, potatoes & beans & simmer for about 15 minutes or until the potatoes are done. Remove the stems from the kale, roll like a cigar & slice into thin strips. Add to the soup and simmer until tender, about 8 minutes. Add salt & pepper to taste and serve with crusty artisan bread.
