  1. ½ cup chopped onions
  2. 1 lb green cabbage, thinly sliced
  3. ½ cup peeled, grated potatoes
  4. ½ teaspoon mace (or nutmeg)
  5. 2 tablespoons white flour
  6. 2½ cups milk
  7. 2½ cups chicken/vegetable broth
  8. 2 tablespoons chopped fresh parsley
  9. 2 tablespoons chopped fresh chives
  10. 2 tablespoons freshly grated Parmesan
  1. Over low heat, melt 2 tablespoons butter in a large saucepan. Sauté onion until tender, about 7 minutes. Add cabbage and potato, stir until cabbage wilts, about 8 minutes. Add mace and flour and stir for 2 minutes. Gradually mix in milk and broth. Bring to a boil, stirring frequently. Reduce heat and simmer until vegetables are tender, about 20 minutes. Cool slightly. Purée soup using a hand blender (omit this step if you prefer a chunky style). Season to taste with salt and pepper. Ladle into bowls, and sprinkle with parsley, chives, and Parmesan. Serve with Irish soda bread.
