Pumpkin Flan

  1. 8 large eggs
  2. 2/3 cup sugar
  3. 1/4 teaspoon salt
  4. 2 cups whole milk (or for a richer taste, use half and half)
  5. 2 teaspoons vanilla
  6. 2 cups cooked and well-drained pumpkin
  1. Preheat oven to 350 degrees. Place all the above ingredients in a food processor or blender and puree until well blended. Pour into a 9 inch by 5 inch by 3 inch loaf pan. Carefully set the pan in a larger pan of hot water 1 inch deep. Bake the flan for approximately 1 hour or until a knife comes out clean in center. Cool completely and chill for 2-3 hours. Makes 8 servings.
