Rainbow Chipotle Potato Salad
This smoky potato salad is a great side dish to serve at your next barbecue.

  1. 3 lbs (total) Yellow Finn, Purple, and/or Red Skinned Potatoes cooked in salted water until just tender 1-1/2 cup corn kernels
  2. 3 green chilies roasted, peeled, seeded & diced
  3. 1/2 cup chopped sweet onion
  4. 6 slices bacon, cooked and crumbled
  5. 1/4 cup diced dill pickle
  6. 1/2 cup green onions
  1. 1-1/2 cup mayonnaise
  2. 1/2 cup creme fraiche or sour cream
  3. 2-3 T white vinegar
  4. 1 pkg. Smokin’ Chipotle Dip Mix
  5. 2 cloves garlic, minced
  6. salt and pepper to taste
  1. Prepare dressing and allow to sit while potatoes are cooking. Drain and cool potatoes. When cool enough to handle, cut in chunks and place in large bowl. Stir dressing into potatoes. Add remaining salad ingredients and season with salt and pepper. Refrigerate at least 30 minutes.
