Roasted Asparagus w/Toasted Almonds and Lemon Zest

Ingredients
  1. 1 cup Panko Breadcrumbs
  2. 1 tablespoon La Tourangellle Almond Oil
  3. (or use Walnut Oil or EVOO)
  4. 1 teaspoon grated Meyer Lemon Rind
  5. 1 bunch asparagus, cut into 2 inch pieces
  6. 1 head mild lettuce, washed, dried, and torn
  7. into bite-sized pieces
  8. ¼ cup slivered almonds or walnuts, toasted
Dressing
  1. ¼ cup Almond Oil
  2. ¼ cup Meyer Lemon Juice
  3. 1 shallot, minced
  4. salt and pepper to taste
Instructions
  1. Toss breadcrumbs, oil, and rind until well mixed. Spread thin on a baking sheet and toast in the oven until light golden brown. Drizzle asparagus with the oil of your choice. Spread on a baking sheet and roast in the oven until tender crisp. Toss warm asparagus with dressing and arrange on a bed of lettuce. Top with toasted breadcrumbs and toasted almonds.
