Roasted Asparagus w/Toasted Almonds and Lemon Zest

A delicious way to enjoy this spring vegetable!
Ingredients
- 1 cup Panko Breadcrumbs
- 1 tablespoon La Tourangellle Almond Oil
- (or use Walnut Oil or EVOO)
- 1 teaspoon grated Meyer Lemon Rind
- 1 bunch asparagus, cut into 2 inch pieces
- 1 head mild lettuce, washed, dried, and torn
- into bite-sized pieces
- ¼ cup slivered almonds or walnuts, toasted
Dressing
- ¼ cup Almond Oil
- ¼ cup Meyer Lemon Juice
- 1 shallot, minced
- salt and pepper to taste
Instructions
- Toss breadcrumbs, oil, and rind until well mixed. Spread thin on a baking sheet and toast in the oven until light golden brown. Drizzle asparagus with the oil of your choice. Spread on a baking sheet and roast in the oven until tender crisp. Toss warm asparagus with dressing and arrange on a bed of lettuce. Top with toasted breadcrumbs and toasted almonds.
